Recognised since 1996 across four Puglia municipalities including Alezio and Gallipoli, this denomination mandates a minimum of 80% Negro Amaro in its wines. What separates Alezio from neighboring DOCs is the restrictive pressing limit imposed on its rosato style. While the rosso allows a standard 70% grape-to-wine yield from a maximum of 14.0 tonnes per hectare, the rosato is capped at a remarkably low 35% yield. The resulting wines are dry, warm, and sapid with a pleasant bitterish aftertaste. Although there are currently zero verified producers registered, these production standards preserve a specific identity for the origin.
