While the standard Rosso requires a minimum of 50% Sangiovese and caps yields at 12.0 tonnes per hectare, stepping up to a Riserva level—whether for the Rosso, Merlot, Sangiovese, or Ciliegiolo—forces a yield reduction to 11.0 tonnes per hectare. Most distinctive is Amelia's rigorous Vin Santo protocol, which mandates that carefully selected grapes are dried and then pressed between December 1 and March 31 to reach at least 26.6% sugar content, before aging for two years in wooden barrels limited to 3 hectoliters.
