Established in 1999, the Castelli Romani DOC spans 26 Lazio municipalities, including Albano Laziale and Castel Gandolfo, where vineyards face a maximum yield of 16.5 tonnes per hectare. This denomination distinguishes itself from neighbouring appellations by entirely omitting a riserva category. Its rules also permit a unique flexibility for rosato production, allowing producers to craft these wines either by blending white and black grapes or through the short-contact vinification of black grapes. While white wines are subject to a maximum yield-to-wine cap of 73 percent, the red and rosato styles are strictly capped at 70 percent.
