Recognized since 1999, the Circeo DOC is restricted to four Lazio municipalities, including Sabaudia and Latina. While neighboring central Italian appellations rely heavily on Sangiovese, Circeo uniquely distinguishes its red blend by mandating that Merlot must comprise a minimum of 55% of the grape composition. Production rules cap yields at 12.0 tonnes per hectare to deliver dry, full-bodied red wines with an intense aroma. Furthermore, only the rosso classification is permitted to carry the Riserva designation, which requires 24 months of aging, including at least six months in wood, and a minimum alcohol level of 12.5%.
