The appellation's distinct rules mandate that its red wines contain at least 50% Sangiovese, while the white blend requires a minimum of 50% Trebbiano Toscano. Uniquely, its Riserva designations—which must reach a minimum natural alcohol level of 12.0%—require a strict aging period of 24 months starting from November 1 of the harvest year, with no mandatory wood contact, separating its aging protocol from many neighboring Tuscan and Umbrian Riserva regulations.
