Recognized since 1996 across 67 Tuscan municipalities including Arezzo, the Colli dell’Etruria Centrale denomination distinguishes itself from neighbouring appellations by grouping Rosso, Bianco, Rosato, Novello, and sweet Vin Santo under a single name. While its base Rosso requires at least 50% Sangiovese and is limited to a maximum yield of 12.0 tons per hectare, its Vin Santo Occhio di Pernice style showcases the same grape dried naturally to a minimum of 26% sugar. This specialty undergoes aging in caratelli barrels of up to five hectoliters, ultimately reaching at least 14.0% developed alcohol.
