Recognised since 1973, the Gambellara DOC spans four Veneto municipalities, including Montebello Vicentino and Zermeghedo. While Garganega must comprise at least 80% of the blend, this denomination differentiates itself from neighbouring white wine zones through its exacting Classico Vin Santo regulations. Unlike typical sweet wines of the region, its grapes must dry until they reach a minimum natural alcohol of 16.00% vol, with the final wine yield strictly capped at 40% from a maximum of 6.5 tonnes of grapes per hectare. This amber-hued wine then undergoes mandatory aging for at least two years from January following the harvest, developing characteristic vanilla notes.
