Recognised since 2004 across a production zone spanning Castelvetrano, Sambuca di Sicilia, Sciacca, and Menfi, this Sicilian DOC is distinguished from surrounding denominations by an extremely articulated set of production rules. Rather than generalising, the disciplinare details approximately 30 distinct varietal-labeled wines, assigning individual yield and alcohol tables to each. For example, while the basic white and red blends require a minimum natural alcohol of 11.5% and a maximum yield of 12.0 tonnes per hectare, the Rosso Riserva mandates a strict 24-month aging period starting November 1st of the harvest year, restricted solely to Perricone, Nero d'Avola, and Syrah.
