Soave
Wine · PDO · 13 municipalities
Established in 1973, the Soave DOC spans thirteen Veneto municipalities, including Caldiero and Colognola ai Colli. This white wine is defined by a minimum of 70 percent Garganega, yielding a straw-yellow pour with a dry, medium-bodied palate and a characteristic, slightly bitterish finish. What distinguishes Soave DOC from similar regional whites is its strict bottling zone restriction, which is limited exclusively to Verona province and the neighboring communes of Gambellara and Montebello in Vicenza to preserve origin control. Additionally, wines that fail to meet the separate, higher-tier Soave Superiore DOCG requirements can be declassified and sold under this DOC.
