Recognized since 2011 in the Marche region, the Terre di Offida DOC distinguishes itself from neighboring appellations by dedicating its production entirely to white wines crafted from at least 85% Passerina grapes. While the broader denomination spans 25 municipalities, including Acquaviva Picena, its highly specialized Vino Santo style is strictly restricted to the territory of Offida and Ripatransone. This rare sweet wine requires a rigorous 36-month aging process, including 24 months in wood vessels of no more than 500 liters. Furthermore, the grapes for this style must dry naturally on racks or hung, without any forced dehydration, to reach a sugar concentration of 260 grams per liter.
