Established in 2010 by carving territory from the pre-existing Colli Martani DOC, the Todi appellation covers four Umbrian municipalities, including Collazzone. Distinguishing itself from neighbouring areas, Todi lacks any "riserva" designation; instead, the "superiore" category fulfills that aging role for its Rosso, Grechetto, Sangiovese, and Merlot wines. For the specialized Grechetto Passito, growers dry the grapes on the vine or in climate-controlled rooms to cap the final wine yield at 40%. This style must age for at least 10 months starting from November 1 of the harvest year to reach a minimum of 16.0% total alcohol.
