In high-altitude towns like Fonni and coastal bastions like Dorgali, the food identity is shaped by the isolated Gennargentu peaks. Unlike its flatter, coastal neighbors, Nuoro’s culinary soul is fiercely pastoral, defined by the ink-dark Mandrolisai DOC wines and PDO suckling lamb, reflecting an insular, high-elevation terroir.
